In 2008 I had my first speciality coffee. It was like nothing I had tasted before. It was surprisingly delicate, strangely fruity, with a pleasant acidity and more tea like body. It was so far from my norm (a strong Americano with foam). I lost all reference, and I could not believe it to be coffee. How could coffee have such bright flavours, AND NOT FROM AN ESPRESSO MACHINE?
The barista enjoyed my obvious child like epiphany, and came over explain that coffee was actually a fruit, and when processed and brewed
properly could bring out these distinctive fruity flavours. That there were hundreds of varietals of coffee, all with different flavour traits.
It was like learning the world wasn’t flat after all. He introduced me to the AeroPress, his preferred coffee maker, and sent me on my way a changed man.
Since then, I’ve continued to explore, discover and learn something every day.
